Overview

Title: The Effect of Bile Salts On Digestion Name(s): Maryam Hashmi Purpose: To determine if the presence and concentration of bile salts affect the time taken to digest whole milk, infant formula, whey-based tube feeding formula and plant-based tube feeding formula. I hypothesize that the time needed to break down the tube feeding formulas would be least, milk would be most. Procedure: I tested each liquid in the presence of 0%, 1% and 5% bile salt solutions. I prepared 0.05M NaOH, 5% Lipase solution and 1% and 5% bile solutions. I took 4ml of the liquid to be tested, added 6ml of NaOH, 1ml of the bile salt solution (for 0% replace with sterile water). Add 3 drops of phenol red and 1ml of lipase solution. The test tube was then placed in a water bath at 40C, until pink color disappeared, time was noted. Repeat this 3 more times. Results: The average time in minutes to digest 1% of fat in milk was 0.6, 0.78 and 0.52 for 0%,1%, 5% respectively. For plant-based tube feeding formula it was 0.29, 0.16 and 1.09 for 0%,1%, 5% respectively. Whey-based tube feeding formula was 0.98 and 0.72 for 1% and 5%. Whey-based tube feeding formula did not digest in absence of bile even after 15 minutes. Infant formula was 0.81 and 0.62 for 0% and 1%. In 5% bile solution no change was observed even after 25 minutes for infant formula. Conclusion: My hypothesis was partially supported. Milk was digested faster in the presence of bile salts. Tube feeding formulas took less time compared to whole milk except when 5% bile salts were added. Infant formula took the longest.
